Baked Protein Zucchini Oats

I love mine served warm in a bowl with a sprinkle of brown sugar and a splash of milk. It’s soft, lightly spiced, and perfect for slow mornings, meal prep, or an easy breakfast that everyone can enjoy.

Ingredients:
• 3 medium zucchini (600g), shredded
• 300g liquid egg whites
• 80g whole milk
• 85g honey
• 85g Simplified Nutrition Vanilla Optimized Protein
• 2 tsp pure vanilla extract
• 2 tsp baking powder
• 2 tsp ground cinnamon
• 1/4 tsp salt
• 150g old-fashioned oats

Directions:
Preheat oven to 350°F and lightly spray a 9x13” baking dish with oil spray.

Combine all ingredients in a large bowl and stir until well mixed. Pour the mixture into the prepared baking dish and spread evenly.

Bake for 40 minutes, until golden around the edges. The center may look slightly jiggly—this is perfectly fine. It will continue to set as it cools.
