aked Protein Zucchini Oats
Think sweet zucchini bread meets oatmeal with a boost of protein! I put mine in a bowl with a sprinkle of brown sugar and a splash of milk.
Combine all ingredients in a large bowl and stir to combine. Put mixture in a 9x13” pan that has been sprayed with oil spray.
Bake at 350 degrees for 40min. until golden around the edges. It’s ok if it looks a little jiggly in the middle. It will continue to set up as it cools.
Ingredients:
-3 medium zucchini (600g) shredded with a cheese grater
-300g liquid egg whites
-80g whole milk
-85g honey
-85g @simplifiednutrition_ vanilla optimized protein powder
-2 teaspoons pure vanilla extract
-2 teaspoons baking powder
-2 teaspoons ground cinnamon
-1/4 teaspoon salt
-150g old fashioned oats
