They come together quickly in the blender and cook up beautifully with just a few minutes at the stove—proof that comfort food can still be balanced and intentional.
Ingredients:
• 1/3 cup (80g) 2% milk
• 1/3 cup (80g) water
• 2 large egg whites (75g)
• 25g flour
• 25g (1 heaping scoop) Simplified Nutrition Chocolate Protein
• 1/4 tsp salt
• 1/2 Tbsp (5g) dark cocoa powder
• 20 drops liquid monk fruit sweetener
Directions:
Add all ingredients to a blender and blend until completely smooth.
Heat a non-stick skillet over medium-low heat and lightly spray with non-stick spray. Pour a small amount of batter into the pan and swirl to coat the bottom evenly.
Cook for a few minutes until set, then gently flip. The second side will cook much faster. Slide onto a plate and repeat until all batter is used (about 6 crêpes total). Lightly spray the pan between each crêpe.
If flipping feels tricky, allow the first side to cook a bit longer or slightly increase the heat.
