They’re simple to make, easy to store, and perfect to keep on hand for those moments when you want dessert without overthinking it.
Ingredients:
In a microwave-safe bowl, combine:
• 1/4 cup (60g) coconut oil
• 1/4 cup (60g) peanut butter (Jif Natural works well)
Microwave for 30 seconds, until the coconut oil is melted, then whisk until smooth.
Add:
• 2 Tbsp (10g) dark cocoa powder
• 1 Tbsp (15g) sugar-free maple syrup (Walden Farms is a good option)
• 35g Simplified Nutrition Chocolate Protein Powder
Whisk until fully combined. If needed, microwave for an additional 20 seconds to achieve a smooth consistency.
Divide the mixture evenly into 12 muffin cups (silicone works best to prevent sticking).
Optional Topping:
• 2 Tbsp (24g) chopped salted cashews
(Highly recommended for added crunch and texture.)
Place in the fridge or freezer until firm. Store in the refrigerator and enjoy as needed.
