This is one of those simple snacks that feels a little nostalgic, a little indulgent, and surprisingly satisfying. Light, crunchy rice cakes topped with a creamy protein “frosting” and fresh berries—it tastes like dessert, but fuels your body beautifully.

Ingredients:

Protein Frosting:
• 100g fat-free plain Greek yogurt (Fage works well)
• 25g Simplified Nutrition Vanilla Protein

For assembling:
• 2 plain rice cakes (Quaker lightly salted are a favorite)
• 100g fresh strawberries
• 10g honey

Directions:
In a small bowl, mix together the Greek yogurt and protein powder until smooth and frosting-like in consistency.

Spread evenly over the rice cakes. Top with fresh strawberries and drizzle with honey.
