White Chocolate Snickerdoodle Protein Balls

If you have a sweet tooth, these are for you. Soft, cinnamon-spiced, and studded with little bites of white chocolate, these protein balls feel like a treat—but come together with simple, nourishing ingredients.

They’re the kind of snack that disappears quickly (I’ve learned the hard way to hide them from the kids), so fair warning—you may want to make a double batch.

Ingredients:
• 200g oats
• 75g Simplified Nutrition Vanilla Protein
• 1.5 tsp cinnamon
• 274g creamy peanut butter (Jif Natural works well)
• 168g honey
• 1 tsp pure vanilla extract
• 60g white chocolate chips

Directions:
In a stand mixer, combine the oats, protein powder, and cinnamon.

In a separate bowl, mix together the peanut butter, honey, and vanilla. Microwave at 50% power for 1 minute, then stir until smooth.

Add the peanut butter mixture to the oat mixture and mix until everything comes together. Fold in the white chocolate chips.

Roll into balls and chill in the refrigerator until set.
