Chocolate Peanut Butter Protein Bars

Ingredients:

For the base:
• 1 1/2 cups (400g) creamy peanut butter (Jif Natural works well)
• 3/4 cup (90g) Simplified Nutrition Vanilla Protein
• 1/4 cup (60g) pure maple syrup
• 1/2 tsp salt

Chocolate topping:
• 4 oz (112g) semi-sweet chocolate chips
• 1 tsp (5g) olive oil

Directions:
In a medium bowl, use a hand mixer to combine the peanut butter, protein powder, maple syrup, and salt until smooth and well blended.

Press the mixture firmly into an 8x8” pan using your hands.

In a small bowl, combine the chocolate chips and olive oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth. Pour over the protein base and spread evenly.

Refrigerate until the chocolate is set, then cut into bars.
